Since I started my high-protein, low-carb diet, I have been enjoying vegetable omelets for breakfast. Today, I decided to try something different. I made some low-carb waffles. It was simple. It was dietetic. Unbelievably, it was quite delicious (at least to carb-craving me.)
This diet requires fat like butter and buttermilk You can easily replace the buttermilk with any kind of milk and the butter with olive oil.
Here is the recipe:
INGREDIENTS
1 cup soy flour
1 level tablespoon baking powder
1/2 teaspoon baking soda
3/4 cup buttermilk (can substitute any type of milk)
3 eggs
1/2 cup water
4 Tablespoons butter or oil
1 teaspoon vanilla
1 teaspoon cinnamon
2-3 packets Splenda
INSTRUCTIONS
Combine dry ingredients well and then mix in the rest of the ingredients until well mixed and fluffy. Generously grease waffle iron, preheat and bake according to waffle iron directions.
Dietetic Simple to wow!
VARIATIONS
Serve with a dollop of unsweetened whipped cream, a bit of sugar-free syrup and/or a dusting of Splenda and/or cinnamon.
Recipe can be used for pancakes and made in a frying pan
NOTES
Be careful not to overfill the waffle iron, as the batter spreads during cooking.
A wow way to dispense the batter is to pour it into an empty sport top water bottle or cleaned-out dish detergent bottle with a squeeze top. Carefully squeeze batter into center of waffle iron.
