Simple Onion Baked Chicken Cutlets

This recipe is a simple go-to recipe when time is short and I need to crank out a delicious and hearty meal with very little lead time and a minimum of effort.  It requires very little hands-on time and can be baked in the oven in about 20 minutes. It is crispy and crunchy, delicious and very kid-friendly.  It is one of my family favorites.  I usually serve it with a simple fresh salad  to compensate for the canned french fried onions.

INGREDIENTS

1 can French Fried Onions, crushed

1 egg, beaten or 1/2 cup of your favorite dressing

4-6 boneless skinless chicken breasts, pounded or cut thin

 

DIRECTIONS

Preheat oven to 375 to 400 degrees F.

Crush French fried onions in a ziploc bag using a mallet or rolling pin.
Coat the butterflied chicken breasts in beaten egg or dressing.
Press chicken breasts into the french fried onion crumbs.
Place chicken on parchment or foil-lined baking sheet.  Sprinkle extra onions on top.
Bake chicken at 375 to 400 degrees F for about 20 minutes or until chicken is fully cooked.

 

 

NOTES

To reduce cooking time, cut chicken breasts into narrow strips before coating. Reduce cooking time to 15 minutes.
